Ingredients
3 15 oz. cans of Sweet Potato/Yam (drained)
1 cup sugar
3 eggs beaten
½ cup milk
1 stick butter melted
1 tablespoon vanilla
½ teaspoon salt
Instructions
Blend all ingredients in a food processor or with a mixer. Pour into greased baking pan.
Top with the following recipe:
Mix 1 cup brown sugar with 1 cup flour, cut in half stick of butter with pastry blender or whisk. Toss in 1 cup chopped pecans. Cover soufflé.
Bake at 375* for 20-25 min. until topping is golden brown.
