Easy Chicken Cacciatore

Ingredients

2-3 Chicken Breasts grilled or baked

Diced onion, celery, green pepper

1 can petites diced tomatoes

2-3 cloves of minced garlic

½ cup white wine

Sliced mushrooms fresh or jar

½ – 1 cup chicken broth or bullion

1 T. dried Italian herbs or 2 T. fresh

1 T. brown sugar (optional)

1-2 T. Parmesan Cheese

Instructions

Heat 2 Tbs. of olive oil in saute’ pan over medium/high heat. Add onions, celery, and green pepper, saute’ until onions become soft and translucent. Add garlic and mushrooms and saute’ for 2 more minutes. Add wine and chicken broth, simmer until sauce reduces by half (about 10 min. over medium heat) Add canned tomatoes, sugar and herbs, and simmer few more minutes. Finish with Parmesan cheese. Salt and pepper to taste. Serve over bed of pasta (angel hair works best) with grilled or baked chicken strips on top.

Simple Hunter’s Sauce

Sautee’ mushrooms, onions, 1 clove garlic in 2-3 Tbsp. butter over medium high heat 3-5 minutes. Add ½ cup wine and cook until reduced by half. Add ½ cup beef stock ( and diced tomatoes if desired)  and any herbs for flavor. Thicken with corn starch (if desired) just before serving.
